Unrivalled expertise

Joël Robuchon was born in Poitiers and planned at one time to join the seminary in Montmorillon to devote his life to God. In the end he found his vocation in gastronomy, becoming an apprentice chef and then a Compagnon du Tour de France.
His perfectionism and creativity very quickly earned him recognition and a host of titles such as Meilleur Ouvrier de France, Best Restaurant in the World and Chef of the Century. With a total of 25 stars awarded by the Michelin Guide for his restaurants around the world, today Joël Robuchon holds more Michelin stars than any other chef.

 

A return to his roots

On his travels, Joël Robuchon has found inspiration in the techniques and produce of each gastronomic tradition and each local area. Even though he has restaurants in 10 countries, it is in Montmorillon in the département of Vienne, where he spent his childhood, that the chef has decided to open his first school. This is because the Poitiers region has a special place in Joël Robuchon’s heart: it was here that he grew up and learned the professionalism, excellence, humility, patience and commitment essential to a job well done.

A place where past and present meet

Right from the start of the project, Joël Robuchon’s main priority has been to respect the site and its history. This monastery hospital, founded in the 11th century by the Lord of Montmorillon Robert du Puy on his return from the Holy Land, is today listed as a Historical Monument. Accordingly, the rst key principle was to maintain the appearance of the site by ensuring that no new visible elements were added.
